Some technical details

Forced or stop knife.

Laguiole's knife is a folding knife with a forced notch. Unlike the Opinel, it therefore does not have a ring that keeps the blade constantly open. In the case of the Laguiole, the spring is permanently resting on the heel of the blade. When the knife is opened, the spring head (part where the bee is located) locks into the notch in the heel. Thus, by simply pressing the blade (the knife is said to be "broken"), the knife is closed. There is no blade locking mechanism. It is for this reason that the Laguiole is not considered by the legislator to be a white gun (whose use is restricted).  

   

What's a stainless steel blade?

Stainless steel is Mr. Brearley's English invention. This steel will be put on the market in 1913-14 but will not be popularized in France until the 1930s for roofing (steel 18/10:18% chromium and 10% nickel). It consists of adding 12 to 13% chromium in the mass of the steel to give it an unalterability rate. It is therefore a blade that does not oxidize and remains shiny. However, it should be sharpened more regularly. Nevertheless, the latest stainless steels achieve very interesting cutting performance. (Swedish stainless steel: Sandvik reference 12C27)  

       

Damascus steel

The generic term' Damascus' indicates the quality of a steel. This denomination comes from the first Crusaders who, around the year 1000, discovered an extraordinary steel used for the weapons of the Sarrazines. These are several types of steels welded together and folded together (as in the manufacture of puff pastry in the kitchen). Our blacksmith forges Damascus steel so that our Knifemakers make blades, bolsters, corkscrews, handles,... in Damascus. In Laguiole, he is the only blacksmith to master this ancestral technique.    

     

Blade stop

  Can the Laguiole blade be snapped without damaging its cutting edge? Laguiole's knife is a forcibly notched knife (this means that the blade is half-locked). When you fold the blade over its travel, the spring is activated to move and hold the blade in the handle. Once on farms, the papé used to slap his Laguiole to indicate that the meal was over. Today, modern cutlery makes it possible to make its Laguiole without altering its precious edge. On some of our models of knives in Prestige or Collection range, the springs are equipped with a stop. The heel of the blade closes on a stop under the bee (it's like a brake). Your cutting edge is completely protected! For the 3-piece model, consisting of the blade, corkscrew and punch, the blade must always be accompanied by the blade.
